Description

A quick little appetizer to make that is a tasty and alternative version to the normally fried green tomatoes. Enjoy!

Ingredients

  • 2 whole Green Tomatoes
  • FOR THE WET MIXTURE:
  • ¼ cups Fat Free Milk
  • 1 whole Egg
  • Salt And Pepper, To Preference
  • FOR THE DRY MIXTURE
  • 1 cup Panko Bread Crumbs
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • Salt And Pepper, to taste
  • FOR THE DIPPING SAUCE:
  • 2 Tablespoons Plain Yogurt
  • ½ teaspoons Parsley
  • ½ teaspoons Paprika

Preparation

In a small bowl, mix together your wet mixture ingredients.

On a large plate, mix together your dry mixture ingredients.

Slice your green tomatoes. Place each slice into the wet mixture first, followed by the dry mixture. Coat generously in the dry mixture.

Place your coated tomatoes onto a cooking sheet. Spray with olive oil cooking spray to allow the panko crumbs to become golden and crisp while cooking. Place into a preheated oven set to 350ºF and cook for 20-30 minutes (flipping gently halfway through) until golden brown.

Combine the dipping sauce ingredients together. Serve baked green tomatoes with dipping sauce.

These were so good. I’ve never eaten green tomatoes in any recipe and we have a surplus this year and wanted to make fried green tomatoes, but seemed too labor intensive as i was preparing two other dishes for dinner. This recipe fit the bill as being easy and delicious. They baked up in the oven while I prepared the rest of our dinner. Will do this again, for sure. Thanks for the recipe!!

These were wonderful….LOVED that they are baked. I added more garlic, because I’m garlic obsessed, and I used some ranch dressing I had in the fridge, but what a great recipe!! Thanks Sara :)
