Description

I love the fried artichoke hearts you get in Monterey in artichoke season, but I live in Vegas and Hubby has high cholesterol. Here’s a yummy but healthier version you can make year round.

Ingredients

  • ⅔ cups Bread Crumbs, The Clumpier The Better
  • ⅓ cups Grated Parmesan Cheese
  • 12 ounces, weight Frozen Artichoke Hearts, Thawed
  • ¼ teaspoons Oregano
  • ¼ teaspoons Sage
  • ¼ teaspoons Rosemary
  • ¼ teaspoons Dried Garlic
  • ¼ teaspoons Thyme
  • ¼ cups Light Beer

Preparation

Dump all the thawed artichoke hearts in a greased casserole dish (9 by 9 is best). Preheat oven to 325 degrees.

Mix all the dry ingredients (cheese, crumbs, herbs, etc.). Dump herbs all over artichoke hearts. Mix up the whole mess so the artichokes are covered, even in between the leaves where you can.

Drizzle in the beer all over so it soaks in. Put it in the oven for 30 minutes, covered. Increase temperature to 375 degrees and return the dish to the oven, uncovered. Bake uncovered for 20 to 25 minutes until the top is crispy.

Eat.
