Amazingly addictive baked apple chips. Try and eat just one.
Preheat oven to 200 F. Line 2 baking sheets with parchment paper and set aside.
Core and then thinly slice apples. I used a mandolin but I am sure that you could use a knife and cut thin slices too! Place slices in a bowl and lightly toss with the juice from half a lemon.
Place slices on the baking sheet and lightly sprinkle with cinnamon.
Bake at 200 F for at least 2 hours total. At the end of the first hour flip the slices over to ensure even baking. Check on them every 30 minutes after the 2 hour mark. Once they are nice and crispy take them out of the oven and enjoy!
