I made these tonight for a casual dinner with guests. Very easy and VERY yummy. My sugar got a little hot, but they turned out great.

I made these for a New Year’s party and they were inhaled. I did have one slight problem with them, however. I couldn’t seem to keep the underside of the bacon crisp. It became very gooey and broke apart as the juices of the pineapple came out in the oven. I even used high-quality thick-sliced bacon to prevent that, but it didn’t seem to help. I’d love to make them again, but they were so messy and falling apart by the time I arrived at the party. Any suggestions???

These are really easy and delicious. We’ve been making them for sometime now, but I roll the pineapple in the brown sugar and then wrap the bacon around. I’ll try it your way next!

I thought these were really good. I forgot the brown sugar by accident and I added banana peppers from a jar. I liked the spice mixed with the sweet of the pineapple and salty of the bacon.
I really want to try these skewered on the grill. Mmmm.

These are fun. Use fresh pineapple, but not necessarily the BIGGEST pieces. Bite size is much more manageable. Use the Pampered Chef pineapple wedger for easy pineapple cutting.

I made these for a hawaiian pot luck and they were a huge hit. I did get nervous though when smoke starting billowing out of my oven when I attempted to broil them! The crispiness of them is the best part so just make sure you’re careful!

The best thing about these little bites, other than the fact that they disappear off the platter in under 15 minutes, is how freakin’ EASY they are. I will definitely make them again!

Many years ago I attended a wedding outside Boston. One of the appetizers was large scallops surrounded with bacon and drizzled with pineapple juice. It’s still one of the most memorable eating experiences of my life. This is a super flavor combination and I’m sure the brown sugar is a great addition. I will definitely try this!

I will have to try these soon. I make a similar recipe
“Pig Candy”-which is basically just brown-sugar coated bacon. Always the first appetizer to disappear. Your’s at least has one healthy ingredient! Enjoy your prize!

we made these for the boy that came over for our a bonfire, and they ate them all up.. we doubled the recipie too!.
