Description

Sweet, salty, cheesy and chewy bacon wrapped dates are an easy, delicious appetizer for any gathering.

Ingredients

  • 10 ounces, weight Large, Pitted Dates
  • 6 ounces, weight Strong Cheese, Such As Gruyere, Gouda, Or Parmigiana Reggiano
  • 12 ounces, weight Bacon

Preparation

1. Preheat the oven to 350 degrees F.
2. Line a rimmed baking sheet with aluminum foil, and place a cooling rack on top. (for drainage)
3. Cut cheese into small pieces, about the size of pencil erasers (about 1/4 inch by 1/2 inch) or small enough to fit inside of dates.
4. Stuff a piece of cheese into the larger hole of the pitted date. Try to push the cheese toward the center of the date, without splitting the date. Repeat with the remaining dates; set aside.
5. Cut bacon slices into thirds, or long enough to wrap stuffed dates with a slight overlap.
6. Wrap one slice of bacon around the the stuffed dates one time, being sure that the ends overlap slightly. Place the bacon wrapped date, overlap side down, on the rack in the baking sheet. Repeat with the remaining stuffed dates.
7. Bake at 350 degrees (F) until bacon is done to your liking. About 15-20 minutes for most people. I like my bacon super crisp, so I bake them for almost 30 minutes.
8. Serve immediately.
