Description

Great to make ahead for parties, etc!

Ingredients

  • 1 package Boneless, Skinless Chicken Breasts (1 Pound)
  • 12 whole Jalapenos
  • 12 slices Bacon
  • 2 cups Brown Sugar
  • 2 Tablespoons Paprika

Preparation

You can cut everything up the day before for easy put together the day of your party.

Cut the chicken into 6 slices per breast. Cut each bacon slice in half and cut jalapenos in half and remove seeds.

Note: You might want to put oil or gloves on your hands while working with the peppers so you don’t burn yourself. Also, if the chicken breasts are very large I cut them up into more than just the 6 pieces. You’ll need more bacon and jalapenos in this case.

Mix brown sugar and paprika in a large bowl and roll the chicken and bacon slices in it to coat.

Grab a slice of chicken together with a jalapeno half and wrap with bacon. I use toothpicks to hold together.

Place on a cooking sheet (if you put a rack on top of the pan this helps to crisp up the bacon and keep it out of the grease).

Bake at 350 degrees about 45 minutes or until bacon is crisp.
