Description

A simple dip that is sure to please!

Ingredients

  • 1 quart Frozen Corn
  • 1 cup Mayonnaise
  • 1 cup Sour Cream
  • 8 ounces, weight Cream Cheese
  • ½ pounds Bacon, Fried And Crumbled
  • 1-½ cup Shredded Colby-jack Cheese
  • ¼ cups Chopped Green Onion
  • 1 whole Tomato, Chopped

Preparation

Preheat oven to 350ºF.

Heat corn on the stove or in the microwave and drain excess water off. Mix mayonnaise, sour cream, and cream cheese until combined. Add salt and pepper to taste. Add crumbled bacon, corn and mix. Add the colby jack cheese, green onions (save a few to top the dip for garnishment), tomato and mix. Pour into a baking dish sprayed with cooking spray and bake for 25 minutes or until bubbling. Top with remaining green onions. Serve with corn chips.

This dip has become a family favorite. We now make it for dinner one night every year when we are all together at the beach and dig in. Everyone looks forward to it and it is a huge hit at every party I’ve brought it for!

I made this for a birthday party. It was a huge hit!! I did add a bit of chili powder to it for a little bit more flavor. Thanks so much for this recipe. I will be sharing it with several people!

This was a great dip. I served it at our BBQ this weekend and several guests were eating it as a side dish rather than a dip. It was still good served cold or reheated the next day.
