Description

A quick fix when you are in a hurry!

Ingredients

  • 1 teaspoon Dijon Mustard
  • 2 Tablespoons White Wine Vinegar
  • ¼ teaspoons Salt
  • ¼ teaspoons Freshly Grounded Black Pepper
  • 4 Tablespoons Extra Virgin Olive Oil
  • 1 whole Tomato
  • 1 whole Roasted Bell Pepper
  • 5 sticks Crab (Imitation Crab)
  • 1 whole Avocado
  • ½ teaspoons Fresh Parsley

Preparation

Whisk the mustard and vinegar. When the mustard has fully dissolved, season with salt and pepper then slowly add the oil, mixing all the time until the you have a homogenous sauce. Dice the tomato along with roasted pepper and crab sticks. Slice the avocado in half, place each half on a plate. Divide the tomatoes, pepper and crab sticks equally.

Spoon over some vinaigrette, sprinkle some fresh parsley. Serve.

I just got home from the grocery store, and I stopped and looked at the avocadoes and just walked away. I didn’t want to just eat them plain like I usually do, and I couldn’t think of another way to serve them. I know this wasn’t posted this morning, or I would be making it right now. Looks delicious.

I made this today. I only had balsamic vinegar so I used it. I also just broiled my red pepper in the oven as I did not have pre-roasted peppers. I also just cubed the avocado & made it to put on crackers. This was GREAT!
