Description

You could eat this with chips, in burritos, or with a spoon. Creamy mild avocados, sweet corn, tart lime, pungent red onions, juicy tomatoes, bright fresh cilantro, and green chiles for just a touch of heat.

Ingredients

  • 1 package Frozen Corn (10 Oz), Thawed
  • 1 can Diced Green Chiles (4 Oz)
  • 4 whole Plum Tomatoes, Diced
  • 2 whole Ripe Avocados, Peeled, Pitted And Diced
  • ½ cups Red Onion, Diced
  • ¼ cups Fresh Cilantro, Chopped
  • 1 whole Lime, Zest And Juice
  • 2 Tablespoons Olive Oil
  • ½ teaspoons Sugar
  • Kosher Salt And Freshly Ground Black Pepper, To Taste

Preparation

Combine corn, chiles, tomatoes, avocados, red onion, and cilantro in a medium bowl.

Combine lime juice, zest, olive oil, sugar, salt and pepper in a small bowl and then toss it with the avocado mixture. Serve promptly.
