Description

The perfect summer crostini!

Ingredients

  • 1 clove Garlic
  • 1 whole Baguette, Sliced
  • ¼ cups Extra Virgin Olive Oil
  • 2 whole Avocados, Diced Into Bite-size Pieces
  • 2 cups Mango, Diced Into Bite-size Pieces
  • 2 whole Limes, Juiced
  • ½ teaspoons Salt, Or To Taste
  • ½ Tablespoons Crushed Red Pepper Flakes

Preparation

1. Preheat oven to 350ºF. Take the garlic clove and rub onto the top of each piece of bread. Brush the tops with the olive oil. Place the bread on a cookie sheet and toast in the oven until lightly toasted (you can also do this on the grill if desired).

2. In a bowl, combine the diced avocado, diced mango, and lime juice. Toss to combine. Add salt to taste.

3. Scoop about 1-2 tablespoons of the mixture on top of each slice of toasted bread. Sprinkle crushed red pepper flakes on top and serve.

Note: If you don’t like mangoes, you can also use peaches or even strawberries!
