Description

This is one of my favorite summer salsas. It’s colourful and it tastes creamy. Add fresh or thawed frozen corn instead of the canned and adjust the spice level by adding peppers to the salsa. Just don’t forget the salt!

Ingredients

  • 4 whole Avocados
  • 1 can (15 Oz. Can) Corn Kernels
  • 2 whole Roma Tomatoes
  • ½ whole Large Red Onion
  • ½ cups Chopped Fresh Cilantro
  • 1 Tablespoon Garlic
  • 1 teaspoon Red Pepper Flakes
  • 1 Tablespoon Lemon Juice
  • 1 Tablespoon Lime Juice
  • 1 Tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Preparation

1. Cut the avocado in half. Remove the pit. Dice the avocado flesh while still held in place by avocado skin. Scoop out diced avocado and place in a bowl.

2. Dice tomatoes and red onion, chop the cilantro, mince the garlic. Add to the avocado bowl.

3. Drain the corn, add to the mixture.

4. Add red pepper flakes, salt and pepper (to taste), lemon juice, lime juice and olive oil.

5. Mix and put aside for at least an hour to allow flavours to blend.

This salsa is fantastic! I took it to a cookout this weekend and people kept asking me where I got the recipe. It was a huge hit. One guy asked me if I made the salsa and then shook my hand.

I definitely recommend this. I added a couple of tablespoons extra lime juice but the recipe was also delicious as-is.

Lots of flavor and perfect for a hot summer day. Next time I think I might add a chopped jalapeno for a little bit of heat. All in all definitely something I will make again. Thank you!
