Ingredients

  • 4 whole Large Jalapeno Peppers
  • 1 whole Avocado Ripe
  • ¼ cups Cooked, Crumbled Bacon
  • 2 Tablespoons Finely Diced White Onion
  • ¼ cups Shredded Monterey Jack Cheese
  • 2 Tablespoons Fresh Cilantro, Chopped
  • 1 dash Salt
  • 1 teaspoon Lime Juice

Preparation

Preheat oven to 375 F. Grease a baking dish or line a baking sheet with foil.

Cut off the stems of the jalapeno peppers. Cut them in half lengthwise. Carefully remove seeds and white membranes.

Cut avocado in half lengthwise and remove the pit. Using a spoon, scoop the flesh into a bowl. Add bacon, onion, cheese, cilantro, salt and lime juice. Mash everything together. Taste and add more salt if needed.

Spoon an equal amount of filling into each jalapeno half. Place jalapenos on baking sheet and bake at 375 F for about 25-30 minutes or until peppers have softened. Serve immediately.
