Low carb and delicious!
Heat oil in skillet and saute onion and garlic until soft and translucent but not brown. Beat eggs in bowl and add chopped artichoke hearts.
Stir in remaining of ingredients and mix well and pour into 8×8 (sprayed with Pam) baking dish.
Bake at 325 degrees for 25-30 minutes until set.
Let cool and cut into squares.
*This appetizer is very versatile and you can add in cooked bacon, sausage, ham, shrimp, etc.
