Description

A healthy and delicious breakfast or snack!

Ingredients

  • 1 cup Quick Cooking Oats
  • 1 cup Cooked Quinoa
  • 1 Tablespoon Cinnamon
  • ½ teaspoons Nutmeg
  • ½ teaspoons Salt
  • 2 Tablespoons Brown Sugar
  • 2 Tablespoons Flax Seed Meal
  • 2 Tablespoons Honey
  • 2 Tablespoons Unsweetened Applesauce
  • ½ cups Almond Milk
  • 2  Eggs, Lightly Beaten
  • 2 teaspoons Vanilla
  • 1 cup Apple, Chopped
  • ⅓ cups Sliced Almonds

Preparation

Preheat oven to 350 F and generously spray a 36-count mini muffin tin with non stick cooking spray. Recipe makes roughly 32 muffins.

In a large bowl combine oats and cooked quinoa. Set aside.

In a small bowl stir together the cinnamon, nutmeg, salt, brown sugar, and flax seed meal. Add this into the oat mixture. Next add your honey, applesauce, almond milk, eggs and vanilla. Stir until combined.

Finally stir in your chopped apple and sliced almonds. Use a small tablespoon sized scoop to fill muffin tin. Bake for 12-15 minutes or until golden and set. Remove from oven and allow muffins to cool. Store in an airtight container.

*Note: Quinoa cooks quickly and easily in a rice cooker following the same rules as cooking rice!
