Description

Believe me, you won’t be able to stay out of this. Not for the low-calorie/low-fat group. Ha. Great for a big party, though. Also easy to halve for a smaller get-together. Needs to sit for several hours for flavors to meld before serving.

Ingredients

  • 2 cans (11 Oz. Can) Mexi-corn
  • 16 ounces, weight Sour Cream
  • 1 cup (Real) Mayonnaise
  • ½ whole Lime, Juice Only
  • 1 bunch Cilantro
  • 4 stalks Green Onions
  • 1 teaspoon Cumin
  • 1 teaspoon Cayenne Pepper
  • 2 cups Four Cheese Mexican Blend Shredded
  • 2 bags (12 Oz. Bag) Tortillas Chips

Preparation

Mix together the corn, sour cream, and mayonnaise.

Slice the lime in half and squeeze the juice from one half over the corn mixture; mix well.

Chop the cilantro and green onions. Add to the corn mixture.

Blend in the cumin and cayenne pepper.

Mix in shredded cheese.

Refrigerate overnight. Serve with tortilla chips.

Love this dip! I’ve made it about five times and it always disappears! It has quite a kick with the mexicorn and cayenne…but people always come back for more (hence the addictive title). For sure make it a few hours before if not overnight. Thanks for the awesome recipe!

Made this today and it’s really good! Tweaked it a little to our tastes…left out the cilantro and used low fat/reduced fat products. Will definately add this to the party file!

This recips…is AWESOME! I made it for a July 4th party and ended up saving some back for us. I used regular canned corn and did not use cilantro because the cilantro at the store did not look all that great. This is definately addictive!

I made this for a work ‘food day’ and caught several people in the break room eating it out of the bowl with spoons! It’s great!

Loved this! I did make a few changes though. I added 2 whole cans of Fiesta Corn (which comes in bigger cans than the Mexicorn) and about a teaspoon of salt. Other than that, it was perfect. Next time I will probably substitute one can of corn with one can of black beans.

Great dip! Took it too a party and everyone would take a bite and then stop what they were doing, look at the bowl of dip and say “What IS this? – It’s soo good!” Thanks for sharing

I made this today for a party that I’m going to tomorrow. I couldn’t wait to taste it and…it’s good! I can’t wait to see what it’s going to taste like after all of the flavors have some time to introduce themselves. I think I will add some jalapenos next time as well. I left out the cilantro…just can’t stand the stuff. I used as much low fat/reduced fat things that I could (low fat sour cream, reduced fat cheese, Hellman’s Canola mayo)…every little bit helps!
