I have made this dip 4 times now and it always gets gobbled up! It’s delicious!! I love the kick the cayenne pepper gives it. I usually add in one roasted head of garlic.. just because I love garlic. Thanks for sharing your recipe!

OMG! Sooo sooo good! I was too impatient to wait overnight for this, so I tried a few bites before, and it was already so delish. I can’t wait to try it after all the flavors have melded.

This recips…is AWESOME! I made it for a July 4th party and ended up saving some back for us. I used regular canned corn and did not use cilantro because the cilantro at the store did not look all that great. This is definately addictive!

This was really good, but I felt it was lacking a little something so I added some garlic and cajun seasoning.

I made this today for a party that I’m going to tomorrow. I couldn’t wait to taste it and…it’s good! I can’t wait to see what it’s going to taste like after all of the flavors have some time to introduce themselves. I think I will add some jalapenos next time as well. I left out the cilantro…just can’t stand the stuff. I used as much low fat/reduced fat things that I could (low fat sour cream, reduced fat cheese, Hellman’s Canola mayo)…every little bit helps!

Great dip! Took it too a party and everyone would take a bite and then stop what they were doing, look at the bowl of dip and say “What IS this? – It’s soo good!” Thanks for sharing

Made this tonight for a party tomorrow. OMG,so good, I can’t wait to try it again tomorrow to see how it tastes after all the flavors work together.

Loved this! I did make a few changes though. I added 2 whole cans of Fiesta Corn (which comes in bigger cans than the Mexicorn) and about a teaspoon of salt. Other than that, it was perfect. Next time I will probably substitute one can of corn with one can of black beans.

Made your dip the other day. My family has been snacking on it all weekend. Bought the cilantro, but I just couldn’t add it. Can’t stand the smell of it. Anyway, the dip is delicious without it. Thanks for sharing!

This is what I needed! Thank you so much! I made this dip last night and my boyfriend and I ate half of it (we couldn’t wait to refrigerate overnight.) Then today I brought half of what was left to work and everyone went crazy for it. Thanks for sharing!!!!!!

I made this for our small group and doubled the recipe. Let me just say there was nothing left to bring home, it was devoured! This is very yummy. The only change that I’ll make next time is maybe add either hot sauce or diced jalapeno for some heat. Even without though I didn’t hear any complaints, everyone’s mouths were too full
