Description

These hearty little wonton bites are filling and delicious! Great for a simple supper or as an appetizer for your next party.

Ingredients

  • 15 ounces, weight Canned Black Beans, Drained And Rinsed
  • 15 ounces, weight Canned Corn, Drained
  • 4 whole Tomatoes, Diced
  • ½ cups Red Onion, Chopped
  • 1 cup Cilantro, Snipped
  • 1 whole Jalapeno, Seeded And Diced
  • 2 Tablespoons Fresh Lime Juice
  • 1 teaspoon Salt
  • ½ teaspoons Pepper
  • 1 teaspoon Garlic Powder
  • 2 dashes Hot Sauce
  • 6 cups Cooked Rice
  • 2 cups Taco Seasoned, Shredded, Cooked Chicken
  • 2 cups Taco Cheese, Divided Use
  • Sour Cream And Fresh Salsa
  • 36 whole Store Bought Refrigerated Wonton Wrappers

Preparation

Preheat oven to 350 F.

In a large bowl, combine black beans, corn, tomatoes, onion, cilantro, jalapeno, lime juice, salt, pepper, garlic powder and hot sauce. Stir in the cooked rice and chicken and 1 cup taco cheese.

Spray three 12 count muffin tins with non-stick spray (recipe makes 36). Place a wonton wrapper in each spot, spray wonton with more oil and bake for 6 minutes at 350 F. Remove from oven and carefully fill each cup with the filling mixture. Top with remaining taco cheese and bake an additional 6 minutes, or until golden brown on the edges.

Serve hot with a dollop of sour cream and a spoon full of fresh salsa.
