I’m in love with the way these unique crackers came out. The smokey flavor from the oven roasted asparagus make these crackers unshareable…they’re quite yummy! And it lends a taste that’s savory and slightly sweet from the yellow cornmeal. Here’s a tip…they taste great with a soft goat cheese spread.

Here is my favourite lasagna recipe, made with healthy ground turkey and spinach.

Super easy, pretty much healthy (except for the butter maybe), quick dinner. Serves 2 to 4 depending on your appetite!

Chocolate cake and strawberry filling combined under a covering of sweet whipped cream for a show-stopping dessert. This is a cake that not only tastes great but looks fabulous on your table. It does take a bit of time to pull together but is well worth the effort.

Shrimp, sweet onions, tomatoes, and salty feta cheese. All hanging out together. Simmering. Serve it with a side of peas or rice pilaf and you’ve got yourself one easy and terrific meal.

My tribute to the long forgotten tuna sandwich. Loaded with personality, combined with cannellini beans, mayo, onion, and topped with cheese, leafy greens, and tomato. Delish.

Assembled and baked in a flash. Warm, moist, flaky, and sweet. And perfect for a snack, appetizer, or Thanksgiving treat where pumpkin is a staple.

My mom brought this to me 3 weeks after I had my second baby. It is wonderfully creamy and makes any new mommy forget about loosing any of the baby weight. I don’t know why its called a pie because its done in a baking dish… either way it still tastes great!

This quick and easy bean dish is a delicious main course. I serve it with a tossed green salad and some crusty bread.

This is my version of ham and cheese all grown up. The sauce is the kicker here! A light, creamy cheese sauce was spread on first, then the ham and finally a thin layer of mozzarella and provolone. The two cheese flavors really complimented the ham and made for a great light lunch. A small salad or fruit on the side would be perfect to make this into a full meal.
