				<content:encoded><![CDATA[<p>For the folks who celebrate Easter Sunday, the Monday after usually finds them with a stuffed fridge, often with an entire shelf devoted to housing what&#8217;s left of an enormous Easter ham.</p>
<p>Easter Ham. Easter eggs. Ham and eggs seem to always make a joint appearance, don&#8217;t they?</p>
<p>Now, you can always take a cue from <a href="http://tastykitchen.com/recipes/members/golokitchen/">Lauren</a> and use both leftover eggs and leftover ham to make these amazing-looking <a href="http://tastykitchen.com/recipes/appetizers-and-snacks/ham-cheese-melt-deviled-eggs/">Ham and Cheese Melt Deviled Eggs</a>.</p>

If you&#8217;re like me, you&#8217;ll be adding ham sandwiches, split pea soup, and Denver omelets to your week&#8217;s menu. Wait, let me back up a little bit. That would be me, pre-Tasty Kitchen. But now? Well, let&#8217;s just say my choices have grown considerably, thanks to everyone here.</p>
<p>Let&#8217;s start with sandwiches. While I still love a good ham sandwich (or a club sandwich if I&#8217;m ravenous), I keep getting drawn to these sandwich (and spiral roll) ideas that feature ham. And I also somehow can&#8217;t stop thinking about slathering onion butter on everything.</p>

And soups? I could live on soups. I&#8217;ve been known to have a bowl of rice with spicy soup for breakfast, then go on to have the same thing for lunch and dinner. These soups, on the other hand, don&#8217;t even need a bowl of rice. They&#8217;re hearty and filling and really get a nice boost of flavor from the ham. </p>

And those are just a few of the recipes I found to help you free up that refrigerator shelf. So you can make room for cake! Because I like to always be ready to receive a cake if one should so happen to mysteriously appear in my kitchen. (I&#8217;m still waiting, but I&#8217;m ready!)</p>

				<content:encoded><![CDATA[<p>I&#8217;m always blown away by the creativity and imagination of our TK members. As one with two left thumbs with no sense of color matching, who can pipe frosting only if the intended shape is &#8220;lumps of no discernible form,&#8221; seeing all your creations fills me with awe and, okay, a tinge of jealousy.</p>
<p>I&#8217;m working on that jealousy part, but let me tell you. Ya ain&#8217;t makin&#8217; it easy.</p>
<p>We get a constant stream of cuteness here, and Easter seems to bring out the best in you. And that inspires me and gives me hope that, perhaps someday, I can finally work my way up from lumps. Here are a few that I aspire to!</p>

To me, <a href="http://tastykitchen.com/recipes/drinks/homemade-eggnog/">eggnog</a> is the iconic Christmas drink. When we were little, around Christmastime, Mom would carefully pour out mini glasses of the thick, wonderfully flavored beverage and cut it with a bit of milk. We savored what little we got from the small carton.</p>
<p>Now that I’ve learned to make it at home, I can enjoy it in much larger quantities. Which is a good thing, right? Right?!</p>
<p>“I would ask you to make eggnog more often, but then we would get fat,” Reuben informed me.</p>
<p>Let me show you how to make this scrumptious drink for yourself!</p>

<p>Here are the ingredients you’ll need: eggs (of course), sweetener of choice, salt, whole milk, vanilla extract, freshly grated nutmeg and heavy whipping cream.</p>

<p>Cook over low heat, stirring <em>constantly</em>, until the mixture coats the back of a wooden spoon, about 25 minutes.</p>

<p>You can also check to see if the eggnog is finished cooking with an instant-read thermometer. It should be between 170 and 175° F. <strong>Do NOT boil.</strong></p>

<p>Recipe notes:</p>
<p>1. You can use whatever sweetener (within reason) you like to sweeten this drink. I have used maple syrup, granulated sugar and evaporated cane juice with good success.<br />
2. If you like the flavor of rum in your eggnog, you can add a bit of rum extract (or real rum, if you don’t mind the alcohol).<br />
3. I highly recommend using an instant read thermometer to gauge when your eggnog is done cooking. Just make sure you have it set to Fahrenheit&#8212;I once made scrambled eggnog because I accidentally switched the thermometer to Celsius.</p>

<p>3) Pour custard into a large bowl. Stir in vanilla extract, 1 teaspoon of ground nutmeg and the remaining milk. Cover and refrigerate until well chilled, about 3 hours.</p>
<p>4) Just before serving, in a medium bowl, beat whipping cream until soft peaks form. With wire whisk, gently fold whipped cream into custard mixture. Serve with extra whipped cream on top and a sprinkle of freshly grated nutmeg.</p>
<p>Store in the refrigerator up to 3 days.</p>

Thanksgiving has come and gone and that means one thing: it&#8217;s time to start baking cookies! I love baking cookies every day of the year, but especially during the holiday season. <p>Whisk together the flour, baking soda, cream of tartar, cinnamon, and salt in a bowl and set aside.</p>

<p>Melt butter in a saucepan over medium heat. (Tip: Don&#8217;t use a dark pan, which will make it more difficult to gauge the color of the butter as it browns.) Once the butter starts melting, it will begin to foam.</p>

<p>Make sure you whisk the butter as it foams. </p>

<p>After a few minutes, the butter will begin to brown on the bottom of the saucepan. Keep whisking! When the butter begins to brown and give off a nutty aroma, remove the pan from heat. (The butter in the photo above still has more browning to do.)</p>

<p>See that rich brown color? That&#8217;s the color you&#8217;re looking for. Immediately transfer the butter to a bowl to prevent burning. Let the brown butter cool for a few minutes.</p>

<p>The brown butter makes these snickerdoodles extra extra special. I am in love. The cookies are soft, chewy, and have a slight nutty flavor thanks to the brown butter. The cinnamon and sugar makes the cookies pretty and gives them the perfect amount of sweetness. If you are looking for a new holiday cookie to try this year, make these. Your family, friends, and neighbors will love them. And if you don&#8217;t want to share, I won&#8217;t tell. They didn&#8217;t make it out of our house either.</p>

							<span itemprop="instructions"><p>For the cookies:<br />
Whisk together the flour, baking soda, cream of tartar, cinnamon, and salt in a bowl and set aside. NOTE: Make sure your baking soda and cream of tartar are fresh!</p>
<p>Melt butter in a saucepan over medium heat. The butter will begin to foam. Make sure you whisk consistently during this process. After a couple of minutes, the butter will begin to brown on the bottom of the saucepan; continue to whisk and remove from heat as soon as the butter begins to brown and give off a nutty aroma. Immediately transfer the butter to a bowl to prevent burning. Set aside to cool for a few minutes.</p>
<p>With an electric mixer, mix the butter and sugars until thoroughly blended. Beat in the egg, yolk, vanilla, and yogurt until combined. Add the dry ingredients slowly and beat on low speed just until combined.</p>
<p>Chill your dough in the refrigerator (important!) until the dough is cold about 30-60 minutes, or place in freezer for about 20 minutes if you are super eager, although I cannot promise the same results if you do this. Fridge is always best! If you desire a puffier cookie, keep the dough in the fridge overnight.</p>
<p>Preheat the oven to 350ºF. </p>
<p>Once dough is chilled, measure about 2 tablespoons of dough and roll into balls. Meanwhile, mix the rolling mixture ingredients in a bowl. Roll balls in the cinnamon-sugar rolling mixture. Place dough balls on cookie sheet, 2 inches apart. If you desire a thinner cookie, flatten the tops of the cookies a tiny bit (very tiny) with your hand.</p>
<p>Bake the cookies 8-11 minutes or until the edges of the cookies begin to turn golden brown. They will look a bit underdone in the middle but will continue to cook once out of the oven. Bake longer if you like crispier cookies. Cool the cookies on the sheets at least 2 minutes. Remove the cooled cookies from the baking sheets after a few minutes and transfer to a wire rack to cool completely. </p>

<p>Then drop the reserved 1 1/2 cups of batter by the spoonful evenly over the mixture. With a fork or spoon, gently try to push down and spread some of each spoonful so it’s not as thick. You do not need to cover all of the cranberries; try to avoid pushing the batter down into the cranberry sauce.</p>

<p>Bake for approximately 30-35 minutes or until the top is golden brown. Allow to cool for at least 2 hours before cutting into bars.</p>

							<span itemprop="instructions"><p>1. You’re basically going to start off by making cranberry sauce! In a saucepan, add the water and sugar. Stir until the sugar is absorbed. Add the rinsed cranberries, along with the orange juice and zest. Simmer for about 10-15 minutes until the cranberries pop and the mixture begins to thicken. Pour into a bowl and let cool completely (at least 1 hour).</p>
<p>2. Preheat the oven to 375ºF. In a large bowl, add the cake mix, oats, melted butter, eggs, and cinnamon. Mix until everything is well-combined. Set aside about 1 1/2 cups of the mixture. In a 9×13 baking dish, spray with nonstick spray. With the remaining batter, spread and push down into the pan, forming a crust.</p>
<p>3. Spread the cooled cranberry sauce evenly over the “crust”. Then, with the 1 1/2 cups of batter you reserved, drop it by the spoonful evenly over the mixture. Then, with a knife or spoon, gently try to push down and spread some of each spoonful so it’s not as thick. You do not need to cover all of the cranberries, and try to avoid pushing the batter down into the cranberry sauce. Bake for approximately 35 minutes or until the top is golden brown. Let the bars cool for at least 2 hours before cutting into bars (trust me on that one!)!</p>

We&#8217;ve been doing this here Tasty Kitchen Blog for a few years now, and in that time, I&#8217;ve seen a steady stream of dishes pass through our cyber doors, each as tempting as the one before it, all of them wreaking havoc on my daily routine of promising myself, &#8220;Today will be a light eating day, to atone for yesterday&#8217;s sin of gluttony.&#8221;</p>

<p>Place them on a pizza stone if you have one, so they become crispy on the outside, and bake for 10-15 minutes until they are golden brown.</p>

							<span itemprop="instructions"><p>Note: To make sweet potato puree, wash and peel sweet potato and cut into 1-inch squares. Place in a large pot and add enough water to cover. Bring to a boil over high heat and boil for 20-25 minutes or until soft. Remove from heat and drain into a colander and return to the pot. Mash and allow them to sit while you prepare your other ingredients.</p>
<p>1. Pour warm water into a medium bowl and slowly whisk in yeast. Let sit for 10 minutes, then add honey, olive oil and mashed sweet potato. Whisk until thoroughly combined and smooth.<br />
2. In a separate bowl, mix flour and salt. Slowly stir in wet ingredients and continue to stir until it becomes impossible to stir more. Then use your hands to continue mixing and slowly start kneading your dough, adding more flour to your hands to keep it from sticking.<br />
3. Once you&#8217;ve created your dough ball, add olive oil to the bottom of your bowl and roll the dough ball in it until it is coated. Cover with Saran wrap or a damp towel and store in a dry place (I use my microwave) for two hours.<br />
4. Around the last 15-minute mark, preheat your oven to 425 degrees. Divide your dough into pieces you can easily hold in your fist and roll them into long strips around 8 or 9-inches long. Don&#8217;t worry if they&#8217;re skinny, they&#8217;ll still get fat when they bake. Tie each into a knot, tuck the edges under each side, then place each on the pizza stone.<br />
5. Bake until golden, around 10-15 minutes. Brush with minced garlic and olive oil immediately after removing from oven. Allow to cool 3-5 minutes.</p>

							<span itemprop="instructions"><p>Cut the bread into cubes. Try to remove most of the crust. Toast the bread cubes for 15 minutes at 350°F, flipping them once. Put the bread into a large bowl.</p>
<p>While you are toasting the bread, cook the sausage. Heat a medium skillet over medium-high heat. When the skillet is hot, remove the sausage from the casing and add it to the skillet. Cook it, breaking it into small pieces, until it is cooked through. Add the sausage to the bread cubes.</p>
<p>Add the olive oil to the skillet, and then add the celery, onions, poultry seasoning, and salt. When the celery and onions begin to soften, add the apples and cranberries. Cook for another 5 minutes.</p>
<p>Add the celery, onion, apple mixture to the sausage and bread. Pour the chicken broth over everything and mix it well. Transfer the stuffing to a buttered casserole dish, with a lid or covered in aluminum foil, and cook for 20 minutes at 400°F. Uncover and cook for another 15 minutes.</p>
<p>Alternatively, you could stuff the stuffing into your turkey. In that case, let the stuffing come to room temperature before you stuff the turkey (never put hot stuffing in the bird!).</p>
