Growing up, corned beef was an occasional—and much-enjoyed—breakfast treat. I was more familiar with the kind that came in a can, and I always looked forward to Saturday mornings watching cartoons as the smell of corned beef frying with garlic, onions, and tomatoes filled the kitchen. It was many years later that I was properly introduced to the kind that didn’t come in a can, which opened my eyes to a whole other world of cured meat goodness.

Corned beef, however it’s packaged, is not inexpensive, but around this time of year, almost every supermarket has it on sale because of St. Patrick’s Day. I don’t know about you, but every time I prepare corned beef, I always end up with a lot left over. If you find yourself in that same predicament, we thought we’d help you out with a few ideas for those corned beef leftovers.

These all look yummy, but this kind of corned beef is not something we eat much in Ireland, bacon and cabbage is what we eat here. Corned beef and cabbage is an American dish.

Thank you so much for posting this. Reading about food and cooking is a stress relief for me. My husband didn’t get a chance to cook any corned beef this year so we went to a local restaurant and they were so busy my meal was cool by the time I got it. I’m going to buy one this weekend to cook to get my fill!

I love corned beef, but here in England it has a bad reputation for being food of the poor!
But I definitely try one of these recipes x

I make my corn beef differently. I cover it with water, add the spice package and cook it in the crockpot for 6-8 hours. Then I cut all the fat off, cover the top with regular yellow mustard and brown sugar and sprinkle lightly with ground cloves. Put it in a 400 degree oven until the toppings turn into a melted bubbling glaze. This is a favorite at family potlucks and it disappears so quickly that there isn’t left overs.

I just love a warmed corn beef sandwich on rye bread with some grainy mustard, for lunch!. It is the simple joys of life I love. Happy Week Everyone!
