I’m not ready to bid farewell to summer just yet, and I have the calendar on my side. But nature seems bent on overruling us both. The mornings are becoming nippier, leaves are already falling to the ground, and I now have to remind myself all over again that rushing to get somewhere in the mid-afternoon is an exercise in futility with the number of yellow buses on the road. (Seeing all the cute kids hop off the bus and run to their mommies more than makes up for it though.)

Don’t get me wrong: fall is my favorite season. It’s just that it barely feels like we even had a proper summer, so in my mind, it’s still May or June and not mid-September with all kinds of holiday merchandise already filling the store shelves.

As much as I’d like summer to linger, I’m also quite excited about what looms in the immediate horizon: pumpkin season. Yes friends, its arrival is imminent. And I know I’m not the only one excited about pumpkin recipes here. What’s not to love? It’s nutritious, much of it is edible (flesh, seeds, leaves, flowers), it freezes well, makes baked good moist, and in a pinch, it can turn into a carriage if you need a ride to the ball. Yes, pumpkins are real versatile like that.

I love roasted pumpkin! Drizzle some olive oil, sprinkle with salt and pepper, and 45 minutes later, you have a yummy snack! Also, pumpkin lattes and pumpkin bread (the savory kind)!

I have an aunt who once made a phenomenal crockpot pumpkin bread pudding. Served it with the delicious sauce. I need to get that recipe…

Pumpkin trifle, made with crumbled spice cake (made from a mix) layered with a mixture of canned pumpkin pie filling and instant vanilla pudding, plus layers of whipped topping. Crumble gingersnaps on top of the final layer of topping. A family tradition!

I LOVE pumpkin desserts!! I look forward to pumpkin season every year. I love to make pumpkin-chocolate brownies, pumpkin pie, pumpkin bread pudding, pumpkin chocolate chip cookies and chocolate-pumpkin marble cake. Of course, I also love to make pumpkin pancakes for breakfast!

Can’t beat pumpkin muffins! Also, we use pumpkin in baked oatmeal, and in black bean chicken chili. Try pumpkin pie in a graham cracker crust and with pecan streusel topping (added halfway through baking) – so much better than traditional pie!

My secrets:
– Add a splash of the whiskey to the cake batter.
– Hold about 15%-20% of the sugar on the frosting.
– Seriously toast the chopped pecans on the frosting.
– Add a BIG splash of the whiskey to the frosting.

Best frosting ever, and goes perfectly with that cake.

We love pumpkin. Pumpkin mac and cheese, pumpkin bread with cream cheese, and especially roasted pumpkin seeds! A drizzle of oil, a sprinkling of salt, and a 300 degree oven for 20 minutes or so. So simple and so good!

It is a bit hard to think about Autumn (I am trying, though) in the Florida Heat!!! I do love pumpkin in smoothies, typical pumpkin (pecan)pie, I use is primarily around Thanksgiving as most do. So imagine a carved pumpkin or two in the intense Florida heat (Yes, in November) and watch it just
change appearance overnight-well use your imagination? So, down here Y’All we paint them funny faces and keep them indoors (in the air-conditioning)! I am not a big fan of cutting open pumpkins for the seeds or flesh I prefer the easy option canned Libby’s Pumpkin pie filling for my go to recipes! I DO LOVE THE SMELL OF PUMPKIN BAKED GOODS!!!
