It’s that time of year when I’m inspired to make as many homemade things as I can. I think it’s the cold weather that makes me want to hibernate and cook up a storm. This Irish Cream recipe from ILikeToCook22 is sublime. It has little bits of espresso grinds and chocolate and an amazing texture. You’ll never buy it from the store again!

You’ll need: unsweetened cocoa powder, milk, cream, powdered sugar, Irish whiskey, sweetened condensed milk, vanilla, cinnamon, espresso grinds, and honey.

Start by combining the espresso, cocoa powder, cinnamon, and powdered sugar, and mixing it all together.

Then add a dash of heavy cream. Don’t worry, you’ll get to add lots more in a second.

Give it a stir and set it aside.

Now you add some more heavy cream to a blender or if you have an immersion blender, you can do all of this in a bowl.

And then pour all of the dry ingredients mixed with cream into the blender!

Then you add your whiskey. It doesn’t have to be the Irish variety; that’s just what makes it feel authentic.

Blend it for 30 seconds or so until it is smooth and creamy. Try not to drink it out of the blender with a straw. It’s very hard though. Trust me.

Description

Instead of going to the store to buy some Bailey’s, try your hand at making your own. It was quite easy and very good!

Ingredients

  • 1 teaspoon Instant Espresso Granules
  • 1-½ Tablespoon Unsweetened Cocoa Powder
  • ½ teaspoons Cinnamon
  • ¼ teaspoons Powdered Sugar
  • ¾ cups Heavy Cream, Divided
  • ¾ cups Milk
  • 1 can Sweetened Condensed Milk (14oz)
  • 1 teaspoon Honey
  • 1-½ cup Irish Whiskey
  • 1-½ teaspoon Vanilla Extract

Preparation Instructions

1. In a small bowl, mix together the espresso, cocoa powder, cinnamon, powdered sugar, and 3 Tablespoons of heavy cream. Stir until dissolved and set aside.

2. Pour all the remaining ingredients into a large bowl, then add the cocoa espresso mixture.

3. Use an immersion blender to incorporate all ingredients together for 20-30 seconds until your mixture is smooth. If you do not have an immersion blender a traditional blender on pulse or puree will work as well.

4. Pour it into your favorite sealable containers. Let the drink sit overnight for all the flavors to blend together.

5. Be sure to give it a good shake before using and enjoy your homemade Irish cream for up to 2 months. Store in refrigerator.

I made this for New Years. I have allergies to dairy, so I substituted coconut milk, Soy Cream and Almond Milk in the recipe. It was Fantastic! My FIL enjoyed it immensely not realizing it was dairy free. Thanks for sharing this!

I came home from work today and whipped this up. Then sat down on the couch with a mug of steaming hot coffee spiked with some of the fresh Irish Cream. I couldn’t wait for it to sit overnight! And let me just say, I think I’ve found my after-work drink. It is so delicious!! I can’t wait for my husband’s homemade whiskey to finish in the barrel so I can use it!!

We made Irish Cream for gifts this year. It was amazing. We found some really cute bottles form the local wine/beer making store and it was a hit. We are still using a bit of the last batch. I am not sure I will ever buy it from the store again since we did the math and it is about the same price. I think this is a great gift during the holidays!

Irish Cream Cheesecake- wonderful!

I made a chocolate stout cake for my beer loving friend and glazed it with irish cream ganache- I made a batch of standard mocha flavor and used it instead of heavy cream with the chocolate. It’s legendary now.

There’s so much you can do with this recipe. I made a completely dairy free version using coconut cream and powdered sugar for my dairy free and vegan friends.

I make batches and batches of this for Christmas gifts every year- every year I make a new variation:

Cinnamon Vanilla
Mexican Mocha
Coffee Blast
Chocolate Mint
Coconut Cream
Lemon Dark Chocolate

I just finished making a batch of the Cinnamon Vanilla.

I always use Canadian Whiskey- I feel like peaty quality of the Irish Whiskey isn’t as good, and the expense is wasted. If you have an immersion blender, this will be its finest hour.

Basically, the formula for mine is as follows:
1 can sweetened condensed milk
1 1/2- 1 3/4 cup whiskey
1 pint half and half

And then add flavors. Cinnamon Vanilla is a good tablespoon of vanilla and a tablespoon of cinnamon, and sink a stick into the bottom of the container.

For Chocolate Mint, use 1 cup whiskey and the rest Mint Schapps. Use a good chocolate sauce (I use organic) and a dash of vanilla.

For Mocha, use powdered espresso, chocolate sauce, and a dash of vanilla (do this to taste)

For coconut, substitute the half and half for coconut milk, and a dash of extract. Chocolate in this is delicious, and also a dash of vanilla.

Go crazy. This is easy and delicious, and people will adore you for it.

I made eggnog martini’s for several holiday parties this year. They were a huge hit and use Irish cream in the recipe. The addition of this homemade Irish cream would have set them over the top!

Just a tip for when making Irish cream, use Bushmill’s Whiskey as it is the oldest Whiskey distillery in the world and makes the best Whiskey. It was opened in 1604. This tip comes from a seasoned Whiskey drinker and Irish person!

My grandmother used to make homemade Irish cream that’d make your toes curl AND put hair on your chest! We all loved going by to visit during the holidays. Between that and the rum balls, you had to call for a taxi home!
